- Preheat oven to 400℉. Line or lightly grease a large rimmed baking sheet.
- In a large frying pan bring ¼” of water to a boil and add florets and a pinch of salt. Cover with a lid and steam for 3-5 minutes until fork tender.
- Drain and transfer cauliflower to food processor and pulse into couscous sized pieces. Transfer to a large mixing bowl and combine with mozzarella, bread crumbs, Caesar dressing, egg, oregano and salt.
- Form into approximately 24 balls (about 1 tablespoon per ball) and transfer to baking sheet, ensuring they are evenly spaced apart. Bake for 25 minutes. While bites bake warm marinara for serving.
