Balsamic Roasted Brussels Sprouts with Feta

Yields: 4 servings

Ingredients

  • 1 ½ pounds Brussels sprouts, halved
  • 1 medium onion, cut into ¾” wedges and separated
  • ⅓ cup Bolthouse FarmsⓇ Classic Balsamic vinaigrette dressing, plus more for serving
  • ⅓ cup crumbled feta
  • ⅓ cup dried cranberries
  • ½ cup roasted hazelnuts, roughly chopped

Directions

  1. Preheat oven to 425℉.
  2. On a parchment-lined baking sheet, toss together Brussels sprouts, onion, and dressing and distribute in an even layer.
  3. Roast until tender and caramelized, about 15 minutes.
  4. Transfer Brussels sprouts to a serving bowl, and top with feta, cranberries, and hazelnuts. Drizzle with more dressing to taste.

Roasted Garlic Herb Dip

Yields: 1 ½ cups

Ingredients

  • 1 (15oz) can white beans
  • ½ cup Bolthouse FarmsⓇ Creamy Roasted Garlic Yogurt Dressing
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1 tablespoon minced parsley
  • 1 tablespoon minced chives
  • Roasted carrot sticks, potato wedges, asparagus spears, red pepper strips, and/or other roasted vegetables
  • Seeded crackers

Directions

  1. In a food processor, combine beans, dressing, lemon zest and juice, parsley, and chives and process until smooth.
  2. Serve with roasted vegetables and crackers for dipping.
